I call this coconut chicken, but the recipe is actually called Evil Jungle Prince Chicken from Pepper Fool. In fact, I think this dish is more like Thai chicken curry without the curry. It's quite easy to make and still very delicious.

Gordon Ramsay's Fish Cakes
For those of you who don't know this, I am a huge fan of Gordon Ramsay. Why? Why not? The guy has enough angst to shame a teenager. Well of course, his recipes are also amazingly simple! I found this fish cake recipe on-line from his show "The F Word," which I have to admit, I've only watched a couple of times while I was flying on Virgin America, and yes, that was a shameless plug for my favorite airline.

Larb Gai
I've eaten a lot of Thai food before, but never did I order any larb (salad). I want the most bang for my buck, so larbs rarely cross my mind when ordering. Making larb is a different story though, because it's so easy. I found the recipe for Larb Gai from Import Food.
