Pulled Pork Al Pastor Style

Heyo! I did not die or somehow got eliminated from the face of the earth! I was just having way too much fun to cook anything decent. That, and I also made a bunch of culinary flops not worth sharing. But now I'm back and hopefully to stay. Let's see if I can get my creative juices flowing and cooking again.

A quick back story of why this is "Pulled Pork Al Pastor Style" and not just "Pulled Pork" or "Al Pastor Taco": the boyfriend really likes al pastor tacos but we're trying to eat less carbs because we are getting fat. So I can't make al pastor tacos, I decided to make the al pastor meat anyway but instead of chopping it up in cubes and fry them, I'd just make it pulled pork. I'm a genius, I know.

Fish Taco With Mango Salsa

Whenever the weather gets cold, I make Mexican food. What? Oh well, fish tacos it is! Recipe was taken from SimplyRecipes

I always feel like tacos are such a rip off when you buy it. Two or three small tacos for $5 or $6? No, thank you! Even I, a 105 lbs female, feel like two tacos aren't much of a snack. Let me tell you that when I made these tacos to feed three people, it only cost me less than $10 and there wasn't much "cooking" to do, just a lot of chopping.

Chipotle Shrimps and Mexican Rice



They lied about global warming because it's freaking cold! Why is it that San Francisco temperature dips down into the 30's?!? The thirties!!! I decided to make something spicy and south of the border to help me cope with this cold front. What says spicy and warm better than some chipotle shrimps and Mexican rice?
